Garlic Parmesan Roasted Broccoli

Why you’ll love it

High heat is the difference between sad, soggy broccoli and broccoli you’ll fight over: florets roasted at 450°F until the edges char and crisp, then tossed with garlic butter and a snowfall of Parmesan. It’s the side dish that regularly upstages the main course at my table.

Quick facts

  • Prep: 10 minutes
  • Cook: 20 minutes
  • Total: 30 minutes
  • Servings: 4 as a side

Ingredients

  • 2 lbs (900g) broccoli, cut into medium florets (about 8 cups)
  • 3 tablespoons olive oil
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons (40g) butter
  • 3 cloves garlic, minced
  • 1/2 cup (50g) freshly grated Parmesan
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat the oven to 450°F (230°C) with a large rimmed sheet pan inside — a preheated pan jump-starts the browning.
  2. Prep the broccoli. Make sure the florets are dry (wet broccoli steams). Toss with the olive oil, salt, and pepper.
  3. Roast. Carefully spread the broccoli on the hot pan in a single layer — give it space. Roast 15–18 minutes, flipping once halfway, until deeply browned and crisp at the edges and the stems are tender.
  4. Garlic butter. While it roasts, melt the butter in a small pan over medium heat. Add the garlic and cook 1 minute until fragrant and just golden.
  5. Toss and serve. Transfer the hot broccoli to a serving bowl. Pour over the garlic butter, add the lemon juice, and toss with half the Parmesan. Top with the remaining Parmesan and red pepper flakes if using. Serve immediately.

Tips

  • Dry = crispy. After washing, spin or pat the broccoli very dry. Any surface water turns to steam and prevents browning.
  • Cut for maximum crunch: Slice larger florets in half through the stem so more flat surface touches the pan — flat sides brown best.
  • Don’t skip the preheated pan. It sizzles on contact and buys you several minutes of extra caramelization.
  • Variations: Swap Parmesan for pecorino, add lemon zest, or finish with a drizzle of balsamic glaze.
