Why you’ll love it
Crispy tortillas, smoky black beans, sweet corn, and a blanket of melted cheese — quesadillas are weeknight gold, and this version eats like a full meal. The secret is seasoning the beans properly and getting the tortilla genuinely crisp in the pan, not steamed. Serve with all the fixings and watch them disappear.
Quick facts
- Prep: 10 minutes
- Cook: 15 minutes
- Total: 25 minutes
- Servings: 4 quesadillas
Ingredients
- 2 cans (15 oz / 425g each) black beans, drained and rinsed
- 1 cup (150g) frozen or fresh corn kernels
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fine sea salt
- Juice of 1 lime, plus wedges to serve
- 2 tablespoons olive oil or butter, for the pan
- 4 large (10-inch) flour tortillas
- 2 cups (200g) shredded Monterey Jack or cheddar
- 1/4 cup chopped fresh cilantro
- To serve: sour cream, salsa, guacamole, pickled jalapeños
Instructions
- Season the filling. In a bowl, combine the black beans, corn, cumin, smoked paprika, garlic powder, salt, and lime juice. Lightly mash about a quarter of the beans with a fork — this helps everything hold together.
- Assemble. For each quesadilla: sprinkle 1/4 cup cheese over half a tortilla, spread a quarter of the bean mixture on top, sprinkle with cilantro and another 1/4 cup cheese, then fold in half.
- Crisp. Heat a large skillet over medium heat with a thin film of oil or butter. Cook each quesadilla 2–3 minutes per side, pressing gently with a spatula, until deep golden and the cheese is fully melted. Work in batches, adding oil as needed.
- Serve. Rest 1 minute, cut into wedges, and serve with lime wedges, sour cream, salsa, and guacamole.
Tips
- The crisp rule: Medium heat, not high — you want the cheese melted by the time the tortilla is golden. Too hot and the outside burns before the inside melts.
- Cheese matters: Monterey Jack melts the smoothest; a sharp cheddar adds more flavor. Freshly shredded melts far better than pre-shredded.
- Add-ins: Diced bell pepper, pickled jalapeños inside, or leftover shredded chicken all work.
- Reheating: Re-crisp in a dry skillet — the microwave makes them soggy.
