Sheet-Pan Italian Sausage with Peppers and Onions

Why you’ll love it

Sweet Italian sausage, charred peppers, and caramelized onions — all roasted on one sheet pan until the edges crisp and the flavors meld. Pile it into crusty rolls for the best sausage sandwiches of your life, or serve it over polenta or rice. This is the kind of dinner that makes the whole house smell incredible.

Quick facts

  • Prep: 10 minutes
  • Cook: 30 minutes
  • Total: 40 minutes
  • Servings: 4

Ingredients

  • 1.5 lbs (680g) sweet or hot Italian sausage links (about 6)
  • 3 bell peppers (mixed colors), sliced into strips
  • 2 medium yellow onions, sliced into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 4 cloves garlic, smashed
  • 1 tablespoon balsamic vinegar
  • Crusty rolls, polenta, or cooked rice, to serve
  • Chopped fresh parsley (optional)

Instructions

  1. Heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment.
  2. Toss the vegetables. On the pan, toss the peppers, onions, and garlic with the olive oil, salt, pepper, and Italian seasoning. Spread into an even layer.
  3. Add the sausage. Nestle the sausage links among the vegetables. Prick each sausage once or twice with a fork so they don’t burst.
  4. Roast 25–30 minutes, turning the sausages and tossing the vegetables halfway through, until the sausages are browned and cooked through (160°F / 71°C) and the vegetables are soft with charred edges.
  5. Finish. Drizzle the balsamic vinegar over the hot pan and toss everything together. Rest 5 minutes, scatter with parsley, and serve in rolls or over polenta or rice.

Tips

  • Don’t crowd the pan. If the vegetables are piled up, they’ll steam. Spread them out or use two pans.
  • Sausage choice: Sweet Italian is classic; hot Italian adds a kick. Chicken or turkey sausage works too — check a few minutes earlier.
  • Make it a sandwich: Split crusty rolls, add a sausage link and a heap of peppers and onions, and spoon over some pan juices.
  • Leftovers: Slice leftover sausage and toss with pasta and a little olive oil for an easy second dinner.
